The perfect Saturday morning brunch, these quick lemon blueberry oat waffles are a timeless classic. The batter literally only takes 5 minutes to whip together! With the fresh pop of sweet and tart blueberries, the wholesome body from some rolled oats, and a kick from some lemon zest, these waffles are the perfect balance of healthy and satisfying.
The one-bowl assembly of these waffles makes them so easy to whip up for breakfast in the morning!
My inspiration for these pancakes were these big, juicy blueberries that I have been loving recently!
The blueberries were so big, and I was making mini waffles, so I ended cutting them up into smaller pieces for the waffles! Side note, I love the gentle lavender -> white -> green gradient inside these blueberries 🤩
I loved this picture of the batter before mixing it all together, because you can see each ingredient that was tossed into the bowl! It comes together so quickly.
Easiest batter ever! You don't even need a whisk to stir it together — I just used a spoon!
I love how blueberries caramelize and turn the most gorgeous shade of deep indigo when cooked. And look at that golden-brown crust on the waffle!
While the waffles cooked, I cut some blueberries up into flowers 🌼
I topped my waffles with some salted butter! You can also drizzle on some maple syrup or honey.
Ingredients
Makes 1 serving (3 mini waffles)
3 tbsp all purpose flour
3 tbsp atta (whole grain wheat flour)
3 tbsp rolled oats (roughly crushed using your hands, or you can do 1 tbsp oat flour + 2 tbsp rolled oats)
1 tbsp powdered sugar
zest of half a lemon
2 tsp fresh lemon juice or 1 tsp vinegar
1/4 tsp cinnamon powder
1/2 tsp baking powder
pinch of salt
approximately 1/2 cup milk, or enough to get a waffle batter-like consistency
Directions
Mix all the ingredients into a bowl, and stir!
Heat up a mini waffle iron and grease well.
Pour the batter into the waffle iron and wait until it turns perfectly golden-brown!*
Serve with your choice of toppings — fresh blueberries, butter, maple syrup, honey, powdered sugar, candied almonds, blueberry jam, etc!
* The batter can probably be used to make pancakes as well, if you prefer!
